Taffy Apple Salad

large can Chunk Pine apple drained and save juice
2 Cups mini marshmallows
1 Large cool Whip
3 diced apples unpeeled (red) add more if you wish.
1 1/2 Cups Spanish peanuts (skins off)
Night Before
In sauce pan mix pineapple juice 1 1/2 cup sugar 1 egg
well beaten.
1 1/2 t white vinegar 1 t flour
Cook on med heat, heat till thick, stir constantly
refrigerate overnight
The next day add sauce, cool whip mix together. Add everything but peanuts in large bowl, just before serving add peanuts mix and serve.
It is wonderful, I make this for every thanksgiving and Christmas.
