1/2 cup warm coffee
2 cups raw apples, chopped (I peeled mine, also.)

1/4 teaspoon cinnamon (I used 1/2 tsp.)
Cream sugar and shortening. Add egg and beat together. Add flour, soda, salt, cinnamon, warm coffee, apples, and vanilla. Mix well. Spread into greased 9x9 pan. For the topping, mix together the brown sugar and 1/4 teaspoon cinnamon. Sprinkle over the top of the apple mixture. Bake at 350* for 30-35 minutes. Use a 13x9 pan if you want to double this. Enjoy this cake with whipped cream on top! (I frosted with cream cheese icing.)
