Pumpkin Pancakes

2 C. Flour
3 T Brown Sugar
1 T. Sugar
2 tsp. Baking Powder
1 tsp. Baking Soda
1 tsp. All Spice
1 tsp. Cinnamon
1 tsp. Pumpkin Pie Spice
1/2 tsp. Ginger
1/2 tsp. Salt

1 1/2 C. Milk
1 15 oz. Can Pumpkin (Libby)
1 egg (slightly beaten)
2 tsp. Vanilla
2 T. Vegetable Oil
2 T. Vinegar


1)Mix all wet ingredients together with a mixer (low speed)

2)Fold in dry ingredients, stir by hand.

Cook these on about 300 degrees if you have a electric griddle. The secret is cook slow and spread them out thinly using the back of your spoon.

It took me awhile to get my heat just right.

DO NOT thin your batter with milk or water. This washes away your pumpkin flavor.

Butter and sprinkle with powdered sugar and syrup!
