Nikki's Rice Pudding


4 cups milk
1/2 cup long grain rice
1/4 sugar (white or brown)
1/4 tsp salt
2 eggs
1 tsp vanilla
raisins (optional)

in a 4 quart saucepan, combine milk, sugar, salt,and rice. Bring just to a boil, reduce heat and cover. Simmer for 45 minutes to 1 hour or until the rice is very very soft and tender.

In small bowl, beat eggs slightly, stir a small amount of the hot mixture into the eggs, then slowly pour the eggs into the hot mixture in the pan, whisking as you pour. Cook, stirring briskly on low heat, about 5 minutes until mixture starts to thicken. Remove from heat, add raisins if you want at this point and add vanilla. Spoon into individual dishes or pour into a casserole dish and chill for several hours or overnight. Sprinkle with cinnamon or nutmeg to serve.
