Grandma's Dressing


4 or 4 1/2 quarts of chicken broth (either canned or off cooked chicken)
8 cups of white bread, dried and crumbled
8 cups of white cornbread, crumbled
2 cups of finely chopped celery, sautéed in butter
1 1/2 or 1 3/4 cups of finely chopped onion, sautéed in butter
1 12oz can of evaporated milk
1 stick of butter
6 whole eggs
4 tsp of rubbed sage or to taste
2 tsp of salt or to taste
1 tsp black pepper or to taste

Crumble the cornbread and biscuits into a large pan (I use a roasting pan) Add the sauteed celery and onions and the stick of butter. Have the broth boiling and pour over the bread mixture. Add the eggs and mix thoroughly again. Add the seasonings. This should be quite soupy but not watery. Pour into a sprayed baking pan and bake at 400 degrees for 1 hour.
