Porcupine Meatballs


1 egg
2 tsp grated onion (I use dry minced onion)
¼ cup tomato juice (I sometimes use V-8 juice)
1 tsp salt
1# ground beef
¼ cup uncooked rice (I use 2/3 cup instant brown rice because it cooks faster)

Mix the egg, onion, tomato juice and salt. Add the rice and ground beef and mix (I end up using my hands to do this). Form into balls using about ¼ cup mixture. Place in greased casserole dish.

Mix together:

2 tbsp butter (doesn't have to be melted)
Minced onions to taste
½-3/4 tsp celery salt
1 tbsp lemon juice
2 tbsp brown sugar
1 tsp dry mustard
1 tsp Worcestershire sauce
2 cups tomato juice

Pour over meatballs. Bake at 325 for 1 ½ hours, covered.
