Honey Bran Muffins

2 Cups of Wheat Bran
2 Cups of Plain Flour
1/4 cup Sugar
1 1/4 tsp Baking Powder
1/4 tsp Salt
1 Beaten Egg
3/4 Cup Milk
2/3 Cup Honey
1/2 Cup Margarine or Butter Melted


Set oven to 200C (390F) degrees

In a large bowl, stir together the bran, flour, sugar, baking powder and salt. In a small bowl, combine egg, milk, honey and melted margarine (or butter). Add all at once to flour mixture. Stir until just combined, don't beat.

Grease muffin cups or line with paper muffin cups. Fill 2/3 full. Bake for 15-20 minutes or until golden. Remove from pans.

* Can be frozen
* This made 26 mini muffins
