Breakfast Casserole

Here's one I've made for both at home and brought in to work. It's super easy, can be modified to whatever you like and cooks up in the crock pot.

Take a dozen eggs, 1 1/2 cups of milk, beat together with a fork. Salt, pepper.
Take a bag of hash browns, toppings of your choice (diced ham, crumbled cooked sausage, chopped bacon, shredded cheese, diced green peppers, onions, whatever. Spray crock pot with Pam spray, layer a layer of potatoes, toppings, cheese, another layer of potatoes, toppings, cheese, 3 times make the layers. Pour the egg mixture over it, put lid on and cook on low overnight, 8 hours or so. We like to serve it with salsa on the side.

  1. i didn't enjoy this one. the edges and sides were really burnt after i cooked it for the 8 hours. i used sausage, broccoli, mushrooms and red pepper. good combo but the potato had turned pretty mushy and eggs were not a nice color after baking all night. good idea and similar to a baked strata that has bread base and soaks egg overnight, but needs improvement.
